Cannabis Infused Tiramisu Crepes

INGREDIENTS (+sUBSTITUTIONS)

  • Eggs: For a vegan option, substitute for flax eggs.

  • Dairy Free Milk: Choose any dairy free milk that you like. I personally like to use almond milk, oat milk, coconut milk when it comes to making desserts.

  • Tapioca Flour: I only make my crepes with tapioca flour because this ingredient is grain and gluten free. Tapioca gives a lovely bouncy chewy crepe texture.

  • Instant Espresso Powder: If you don’t have espresso powder, you can use regular coffee powder.

  • Vanilla Extract: Must have ingredient! This is going to round out the flavour of your crepes.

  • Dairy Free Yogurt or Coconut Cream: I personally used dairy free yogurt for this recipe but I would definitely try making it with coconut cream as well. Both ingredients have similar texture and taste (depending on the type of yogurt you get). This will be the main ingredient that binds with the cannabis oil.

  • Monkfruit Sweetener: Substitute for any granulated sugar like cane sugar or stevia. I like to use monkfruit because its sugar free and won’t spike my blood sugar.

  • Cannabis infused MCT oil: MCT oil is generally flavourless which is going to be what you want for this dish. You don’t want your cannabis oil to have much herby taste in this dessert as you’ll want the espresso and chocolate flavours to dominate.

  • Cacao Powder: I like to use cacao powder because it’s a less processed version of cocoa powder, so you get more of the nutrients and antioxidant benefits. Substitute for cocoa powder or any other chocolate powder.


TIPS & TRICKS FOR SUCCESS

  1. I recommend using a wired cooling rack for laying out your crepes after each one finishes cooking. This will prevent your crepes from having “sweating out” any additional moisture as you don’t want your crepe stacks to get soggy.

  2. Using a high quality non-stick pan like this one from All-Clad is going to be the key to making perfect crepes. With these pans, I don’t have to add any cooking oil to make the crepes, and it doesn’t leave a mess all over the pan!

Dairy free, gluten free, and grain free tiramisu-inspired dessert. Naturally sweetened with monkfruit sweetener. The perfect guilt free dessert.

Ingredients

Crepes
  • 4 large eggs
  • 4 tbsps dairy free milk
  • 2 tsps vanilla extract
  • 1 cup tapioca flour
  • 2 tbsps espresso powder
  • 4 tbsps monkfruit sweetener
Filling
  • 1 cup dairy free yogurt or coconut cream
  • 4 tbsps monkfruit sweetener
  • 2 tsps cannabis infused MCT oil
Topping
  • 2 tbsps cacao powder

Instructions

  1. In a large mixing bowl, combine the ingredients for the crepes together. Mix well until the batter has no clumps.
  2. Heat up a non-stick pan to low-medium heat.
  3. Pour 3-4 tbsps of crepe batter into the pan and cook the crepe until both sides are done. When a crepe is finished cooking, lay it flat on a wired cooling rack.
  4. Repeat Step 3 until all the batter is finished.
  5. In a small bowl, combine the ingredients for the filling together. Mix well.
  6. On a plate, Layer the crepes on top of one another, while spreading a thin layer of filling on every crepe.
  7. When all the layers are finished, dust caco powder on top.
